
There was a time when the very mention of mint in food would make me cringe. Mint chutney? No, thank you. Mint chocolate or ice cream? Absolutely not—it felt like eating toothpaste! I’d always imagine the minty freshness overpowering any joy of savoring food.
But lately, something’s changed. It started with my love for mint chutney. One day, I gave it a hesitant try with samosas, and surprisingly, it was delightful! The freshness of mint mixed with spices made it irresistible. Since then, my perspective on it has taken a 180-degree turn.
Now, I’m venturing into mint desserts. Yes, you read that right! I’m planning to try mint chocolate cookies. The thought of warm, gooey chocolate combined with a hint of refreshing mint has me intrigued.
Here’s the recipe I’ll be following:
Mint Chocolate Cookie Recipe
Ingredients:
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter (softened)
- ¾ cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp peppermint extract
- 1 cup dark or semi-sweet chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, beat the butter and sugar until creamy. Add the egg, vanilla extract, and peppermint extract. Mix well.
- Gradually add the dry ingredients to the wet mixture and mix until a dough forms. Fold in the chocolate chips.
- Scoop out small portions of dough, roll them into balls, and place them on the prepared baking sheet. Leave space between each.
- Bake for 8–10 minutes. The cookies should be soft in the center but firm on the edges.
- Let them cool for a few minutes before enjoying!
This afternoon, I’m spending time at home, watching birds hopping around on the trees outside, their tiny feet rustling the branches as they flit from one branch to another. The golden leaves are lazily drifting to the ground, a true autumn spectacle.
I imagine myself savoring these mint chocolate cookies with a warm cup of milk. It feels like a cozy embrace for the soul.
